Ask the Brewers and Chefs: What foods do you pair with your favorite Marzen/Oktoberfest beers?

As the weather cools and summer turns into fall, tap lines and shelf space start being consumed with delicious marzen, Oktoberfest, and fresh hop beers from many of Iowa’s wonderful breweries and from breweries around the world. As fall comes into our lives our bodies are telling us to consume more hearty and energy packed foods to prepare ourselves for winter…so…I guess what the fall season tells us to do is drink beer and eat good food….with that being said, what are the favorites from the local brewers, chefs, and people working in the food and beer world for pairing these wonderful beer styles to their favorite dishes? Let’s find out:

Quinton McClain – Brewer/Owner Lion Bridge Brewery, Cedar Rapids – “For Lion Bridge’s Oktobot 3000, definitely schweinsaxe. (roasted ham hock or pork knuckle) For Lion Bridge Robofest, I would go with tailgating foods… wings, brats, soft pretzels, tacos. It’s an easy drinker, but has a beautiful European Malt Character that pairs well with good conversation and finger foods.”

Alec Travis – Brewer/Owner Field Day Brewing, North Liberty – “Festbiers are pretty good for pairing with almost anything! Marzens have a touch more of that caramel profile that I think go well with some savory fatty stuff. For me, I’d pair that with a pork chop or pork shoulder or something. Maybe some herbed risotto as a side!”

Todd and Blake Viall – Brewers/Owners – Clock House Brewing, Cedar Rapids – “We came up with a jalapeño popper chicken griller wrapped with applewood smoked bacon, side of pineapple coleslaw, and dessert of coconut flan!”

Aaron Vargas – Owner – Backpocket Brewery, Coralville – “Savory for sure. Pork, whether it is a brat or schnitzel. Something about the fat in there is where it is at!”

T.J. Lytle – Chef- Big Grove Brewery, Solon – ” Yeah, I have a few. Can’t go wrong with a pretzel, beer cheese and the spicy vinegary mustard. Literally one of my go tos. The other 2 are something my grandma always did. She passed away a couple years ago but we used to have a big family gathering at her house and she would make these, my mom still makes them every year and we enjoy them. I just tweak it a little bit 😁. My grandma was very Polish so she always made Haluski, and pierogies. The haluski is a soft noddle with cooked down cabbage. We added bacon just because who doesn’t love bacon haha. Finish with a bunch of black pepper and butter. Sooo gooood. The pierogies was always my favorite. She would buy the store bought in a bag which I have a sweet spot for but homemade really is a game changer. In my filling I use russet potatoes, stone ground mustard, cheese, salt and white pepper. We would cook down a bunch of onions, sausage, remove the sausage and cut it thin. Throw it back in with the pierogies. A bunch of butter. Top with a bunch of scallions. Literally one of the best things I enjoy. Really reminds me of home and a lot of good memories with my family!”

Shane Knipper – Brewer- Dimensional Brewing, Dubuque – “Stateside, I tend to lean towards a basic bratwurst from a local meat locker, with a German horseradish mustard and sauerkraut. I also really like a festbier with currywurst. If you can get some authentic Brezen, Schnitzel, Rouladen, or Spaetzle, that’s definitely the way to go, but can be hard to find locally. Basically, any hearty meal.”

Travis Lange – Head of Sales – Iowa Brewing Company, Cedar Rapids – “Of course you can’t go wrong pairing these beers with more traditional fare, like pork schnitzel, bratwurst and soft pretzels topped with cheese, dill and smoked meats. But my go-to food pairings are carnitas tacos and venison chili. Hearty, spicy foods that meld nicely with the herbal and earthy hop edge.”

Jim Johnston – Brewer- 3rd Base Brewing, Cedar Rapids -“My favorite would be Zweigle’s White Hots on a caraway seed bun.”

Joe Dooley – Chef – Need Pizza, Cedar Rapids – “Smoked & reverse seared Iowa chops. Apple cider braised red kraut. And roasted acorn squash with enough butter & brown sugar to choke a friggin donkey. First thing I’m in the mood for when the weather turns, & it’s on the menu for tonight!”

Jeremy Freerks – Club 76 The Lodge, North Liberty – “Personally as a compliment, I’d like to say the richness of the gravy and meat of sauerbraten pairs well with the maltiness of that those beers. I also believe as a compliment oven baked brats and kraut caramelizes nicely to match most Oktoberfest/marzens. I think fresh kraut on a brat can easily bring together sweetness of the brat and sour of the kraut for the bang of fresh hop beers as a compliment and contrast. Same goes for Hot German Potato salad. Sweet and sour with the bacon backbone is a solid choice for a fresh hop IPA.”

Chula
Fruited Gose is brewed with authentic Indian Alphonso Mangoes and a tangy Chile Spice Blend from our friends at Big Mich 6.5%

Moreover
Double Dry Hopped, Hazy IPA is a delicious juice bomb thanks to a hefty hopping of Citra, Motueka, & Simcoe hops. An endless succession of juicy pineapple, grapefruit, and tangerine notes are leveled out with just a hint of bitterness that resolves into a smoooooth and refreshing finish. 6.5%

Lil Space Booties
A session hazy like none other, these lil’ booties carry a heap of juicy hop characters. Thanks to an un-apollo-getic amount of Galaxy and Citra hops, you can expect to experience the same atmospheric symphony of mango, pineapple, and fresh peach but with a featherweight ABV so you can keep you maintain your orbit with ease. 5.5%

La Push, Baby
Double Dry Hopped Double India Pale Ale with Eclipse, Citra, & Chinook. The aroma tantalizes your senses with a symphony of enticing notes. Fragrant waves of tropical fruits, like juicy mangoes and ripe papayas, intermingle with the heady sweetness of caramelized pineapples. 8%

Oktoberfest 
We brewed this amber beauty strong and true to style, with a bold malty backbone and a refreshingly mild hop presence that’s accentuated in crystal-quality footwear.

DDH Double Pixel Density
We brought up the ABV of our regular Pixel Density and gave it our double dry hop treatment of some sticky-icky fruity citra and citra cryo. 8%

DDH Perpetual Sounds
A favorite around the brewery and we are glad to have this Double IPA back. A tried and true Pacific Northwest hop combination of Mosaic and Amarillo pull flavors of blueberry, peach and grapefruit. 7.7%

Double Nectar Mango Sicilian Lemon
Double Nectar is back with a brand new fruit combo! Unleashing a tropical storm in a pint, this fruited Sour Ale is a ‘sip-n-slide’ into a pool of mango and Sicilian lemon – a zesty lifesaver for these toasty summer days. 7.8%

LULZ Pink Lemonade
A crisp, refreshing hard seltzer featuring pink lemonade. Back for the 2023 spring and summer season! Welcome back, sunshine and LULZ Pink Lemonade! 5%

Juicy Bits
Our flagship IPA features a huge citrus and tropical fruit hop character from the Mosaic, Citra & El Dorado hops and softer, smoother mouthfeel from the adjusted water chemistry, higher protein malts, and lower attenuation. The end result is a beer reminiscent of citrus juice with extra pulp, thus the name Juicy Bits. 6.7% 

The Captains Club
Tropical Sour Ale with coconut, passion fruit, macadamia nuts, and macadamia nut honey… all it’s missing is the hula skirt and lei 5.2%

Auto Tune
Collaboration with Mikerphone Brewing. Hazy DIPA uses Citra, Lotus + Mosaic hops and is gushing with notes of pineapple, lemon, and papaya 8.8%

Strawberry Cheesecake 
Sour Ale with Strawberry Puree, Cream Cheese, Milk Sugar & Graham Cracker. 4.5%

Space Tunnel 
Hazy IPA that boasts flavors of tangerine, strawberry, citrus, and a hint of stone fruit. 6.5%

Supremely saturated with HBC 586 & HBC 586 Cryo, an as yet unnamed varietal from the Hop Breeding Company that has very swiftly become one of our figgity favorites. Fully sending it with this one in pursuit of those “lunchroom cups where the fruit is still sitting in the juice” vibes we’ve become oh-so-fond of. What’s in a name anyway? 10%

Microdosing Cashmere 
Get your daily dose of this IPA that we dosed daily (… AKA every day of primary fermentation) with one of our favorites: Juicy & Creamy Cashmere. Expand your horizons. Open your mind. Put this in your mouth. 7.2%

Local 755
Our Foggy Favorite. Azacca, Amarillo & a Gwop of Citra. Soft, Juicy & Hazy like 70’s Home Movies. 6.8%

Zoinks!
This Session IPA features a punch of citrus from mosaic and citra hops, and a slight bitterness with juicy flavors of grapefruit and a hint of pine on the finish. 4.5%

Surf Zombies
Named for Iowa’s Epic Surf Rockers, this gnarly brain devouring West Coast-inspired IPA features Simcoe, Columbus, Centennial and Cascade hops. 6.9%

“Bluesberry” Fruit Burst sour from Iowa Brewing debuting this Friday Night @Blues Night in the Park in Cedar Rapids!

A big Friday night awaits in Cedar Rapids as this Friday, May 19th, Iowa Brewing will be debuting their newest addition to their extremely popular “Fruit Burst Sour” portfolio as “Bluesberry” debuts! Making the debut even more significant is that it will be coming and pouring at Blues Night in the Park (Green Square in Cedar Rapids)!

This beer features blue raspberry, orange, and pineapple flavors that give it a sweet, juicy and slightly tart taste and it checks in at 6% ABV. This beer will only be available on draft and possibly your only chance to get a taste will be at the Blues Night event!

The event itself has a $5 cover and will feature recognized blues acts such as BF Burt, Keesha Pratt Band, Matthias Lattin, and Ken Valdez.

Local food vendors will be on hand to try their delicious items as well! Need Pizza, Willy Ray’s Q Shack, and The Hip Stir will have their wonderful food available and Chophouse Downtown will have cotton candy! Gates will open at 5 p.m. and music will go from 6-10 p.m.!

Iowa Brewing releasing BA Imperial Oja + variants on Black Friday! 11/25!

Big news out of Cedar Rapids as Iowa Brewing Company will be coming off of their ever popular Cousin Eddie Thanksgiving Day party and on Black Friday releasing Barrel-Aged Imperial Oja and variants. Here’s a rundown of this release courtesy of Iowa Brewing’s Facebook page:

Iowa Beer Week in Review: Firetrucker, Third Base, Contrary, Iowa Brewing, Lark

There were quite a few new releases around the state last week and hopefully many of you got out there and tried some of these brews. Even with Benz hosting their annual beer festival, brewers were still pushing out some new ales for us to enjoy. Here’s what was happening last week:

cat.jpg**Firetrucker Brewery** – Firetrucker released Copper Cat which is their beer interpretation of a Moscow Mule. Loaded with ginger and lime this brew checks in at 6.5% and would be perfect for the mule fan and for the warmer days ahead. Here’s more on this brew:

Your favorite summer drink just became portable! Copper Cat is loaded with fresh ginger and bright lime to cool you down when the temps are blazin’, Pour this rad gluten free concoction straight into your mouth or get crazy and use a copper cup for a true Moscow Meowl experience.

**Reunion Brewery** – Reunion Brewery in Coralville had a big week of releases last week. The announcement of their wonderful double IPA Tank Puncher coming to canning lines was met with excitement and then they tapped up their Double Dry Hopped Citra Juice Factory Pale ale. Tank Puncher cans should be hitting shelves in June, and don’t forget about their sweet shirts made by Johnnie 5, might as well grab one of those too!

**Third Base Brewery** another brewery with a busy week was Third Base in Cedar Rapids. They not only announced the return of Obsidian Sword but along with Cedar Rapids’ other fine breweries released 80% Hugging, a golden ale with mangoes and citra hops. To go along with that they’ve released Dreaming Out Loud which is a sour brewed with oranges and centennial hops and then fermented with peaches. Last but not least for 3rd Base is the announcement of the release of Pastriarchy, a cinnamon roll imperial stout. This beer will be released May 17th and will be on tap and available in crowlers!

**Contrary Brewing** – heading over to Muscatine and Contrary Brewing who released Citrus Paradisi. Citrus Paradisi IPA is brewed with amarillo, eureka and simcoe hops with grapefruit purée! Check this one out while you can!

**Iowa Brewing** – huge week for Iowa Brewing, fresh off of winning silver at the World Beer Cup for Tragedy of the Commons they come right back to work with the bottle releases of 4 Hang Fire variants.They released Templeton Hang Fire, Rubus Hang Fire, Aquilla ‘nilla Hang Fire, and Brunch AF Hang Fire. I have yet to get a taste but I’ve been hearing great things so make sure to swing by Iowa Brewing when you are in Cedar Rapids!

**Lark Brewing** – this one just came across the wire and it sounds like a can’t miss event if you are in the Cedar Falls/Waterloo area:

We are releasing Savath, our BA Imperial Stout, with two variants of Blueberry and Cacao, this Thursday at 4PM. There will be 20 Crowlers available of each variant, and a limit of one crowler of each (two total) per person. There will also be eight gallons of each on tap @ 4oz. and 8oz. pours.
